The Hospitality Industry - Pt 114


He can smile with you and compliment your work this minute and then walk off to tell somebody to fire you.  He stands by his decisions (often made on "instinct", meaning, poorly thought-out) wrong or right.  And he is wrong a lot. A lot. You get the feeling that leaping to conclusions and uninformed reasoning are mistaken for decisiveness around here.


You act quickly without really knowing what you are doing and that's better than being observant and making intelligent assessments.


The restaurant business is known for it's ability to train a newbie in any position relatively quickly, hence the ease of replacing pretty much anybody. Firing the wrong person, or placing blame wrongly are almost without consequence to management. Cooks should never be in positions of power.
